Make sure to use tahini to make the sauce for these Middle East–inspired sandwiches. Prepare the tahini sauce and chicken ahead of time and stuff the pitas when you are ready to eat.
Tahini Sauce: Have This!
- Six tablespoons plain fat-free yogurt
- Two tablespoons shredded cucumber
- Half tablespoons tahini
- Five teaspoons fresh lemon juice,
- Five garlic cloves
- One tablespoon extra-virgin olive oil
- One teaspoon dried oregano
- One-fourth teaspoon salt
- One-fourth teaspoon freshly ground black pepper
- One pound skinless chicken breast
- Four pitas
- One cup shredded iceberg lettuce
- Half cup thinly sliced red onion
- 17 slices cucumber
- 17 slices plum tomato
Do This
- Combine yogurt, shredded cucumber, tahini lemon juice, and garlic in a small bowl. Then set it aside.
- Combine remaining lemon juice, olive oil, and next four ingredients in a small bowl.
- Heat a grill pan over medium-high heat.
- Thread chicken pieces evenly onto four skewers.
- Add chicken to pan and cook ten minutes
- Turning every two minutes.
- Remove chicken from skewers.
- Divide chicken evenly among pita halves.
- Fill each pita half with two tablespoons lettuce, one tablespoon onion, two cucumber slices, two tomato slices, and one tablespoon sauce.
