Tahini-Black Bean with Queso Fresco

This Mexican-inspired is a tahini-black bean instead of queso for taco night.  Moreover, top it with queso fresco, onion, cilantro, and serve with tortilla chips.

Have This!

  • One tablespoon tahini
  • A tablespoon lime juice
  • A tablespoon extra-virgin olive oil
  • One unsalted black beans
  • One-fourth teaspoon kosher salt
  • Three tablespoons water
  • A garlic clove
  • Half teaspoon red wine vinegar
  • One-half teaspoon ground cumin
  • One-fourth teaspoon kosher salt
  • One-fourth teaspoon crushed red pepper
  • Two tablespoons queso fresco
  • One tablespoon chopped red onion
  • Teaspoons chopped fresh cilantro

Do This!

  • Combine tahini, lime juice, olive oil, beans, salt, water, and garlic clove in the bowl of a food processor.
  • Add vinegar, cumin, and crushed red pepper to food processor with black bean mixture. After that, process until smooth.
  • Top with queso fresco, onion, and cilantro.
