Have This!

  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 ounces Parmesan cheese, grated and divided (about 6 Tbsp.)
  • An anchovy fillet, minced
  • Cooking spray
  • 4 (6-oz.) skinless, boneless chicken breasts
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole-wheat panko (Japanese breadcrumbs)
  • 2 romaine lettuce hearts, halved
  • 1 tablespoon tahini
  • 2 tablespoons olive oil, divided
  • 2 teaspoons fresh lemon juice

Do This!

  • Preheat broiler to high.
  • Combine mustard, half of the cheese, and anchovy in a bowl. Heat a grill pan over medium-high; coat with cooking spray. Sprinkle chicken with salt and pepper; add to pan, and cook 4 minutes.
  • Turn, brush with mustard mixture, top with panko, and coat with cooking spray. Place pan in oven; broil 7 minutes or until chicken is done. Let stand 5 minutes. Cut into slices.
  • Return pan to medium-high. Brush cut sides of lettuce with 1 tablespoon oil. Grill lettuce, 2 halves at a time, for 2 minutes.
  • Place 1 chicken breast and 1/2 lettuce heart on each of 4 plates. Top lettuce evenly with remaining 1 tablespoon oil, juice, tahini, and remaining 3 tablespoons cheese.

Pork Roast with Dried Fruit and Tahini Recipe

Have This!

  • A c. dried figs
  • One c. dried apricots
  • A c. dried cherries
  • Three c. dry red wine
  • Three stick cinnamon
  • Two tbsp. finely chopped fresh rosemary
  • Two tsp. salt
  • One tsp. tahini
  • A tsp. Fresh ground black pepper
  • Two clove garlic
  • Two tbsp. extra-virgin olive oil
  • Four lb. boneless pork loin roast

Do This!

  • Heat oven to 500 degrees.
  • Bring the dried fruit, wine, and cinnamon sticks to a boil in a small saucepan. Remove from heat and let steep for 20 minutes.
  • Drain the fruit, discarding the cinnamon sticks. Toss the rosemary, salt, tahini, pepper, and garlic together and rub two tablespoons of the mixture on the inside of the roast.
  • Layer with the steeped fruit and roll the roast tightly into a log. Tie with butchers twine. Rub the outside of roast with oil and the remaining rosemary mixture and place on a rack set in a roasting pan. Reduce oven temperature to 325 degrees and roast until temperature reaches 155 degrees, about an hour.
  • Allow pork to rest for 15 minutes before slicing.

Instant Pot Chicken Pho With Tahini

This instant pot chicken pho with tahini makes the traditional Vietnamese chicken noodle soup easy to make at home in around 30 minutes. And this all thanks to the help of your pressure cooker.

Have This!

  • 14 oz rice noodles
  • One Tbsp olive oil extra virgin
  • A large yellow onion halved
  • One piece ginger cut
  • Three cardamom pods lightly smashed
  • One tbsp tahini
  • A cinnamon stick
  • A Tbsp coriander seeds
  • Three-star anise pods
  • Five cloves
  • One Fuji apple peeled, cored and cut into half chunks
  • Half cup coarsely chopped cilantro leaves
  • Six chicken thighs bone-in, skin-on
  • Three Tbsp fish sauce
  • A Tbsp sugar
  • Eight cups water
  • Two tsp kosher salt

Do This!

  • Soak the noodles in large bowl of warm water for 30-45 minutes. Set aside while you prepare the pho broth.
  • Add the oil to your Instant Pot and select the sauté option. One hot, adds onion cut side down, and ginger. Cook, without stirring, for about four minutes, until slightly charred.
  • Add cardamom, cinnamon stick, coriander, star anise and cloves and cook for one minute longer, until fragrant. Add the water to the pot along with apple, cilantro, chicken, fish sauce, and sugar. Secure the lid.
  • Select Manual and cook at high pressure for 15 minutes.
  • When done, turn off the Instant Pot and let the pressure decrease naturally for 10 minutes. Set a timer and if the pressure hasn’t completely released when it goes off, turn the valve at the top to release any remaining pressure.
  • Remove chicken from the pot and set aside. Strain the broth and season with salt pepper, and tahini to taste. Skim some of the fat from the broth.
  • When the chicken is cool enough to handle, separate the meat from the bones and divide the meat among four large soup bowls.
  • Strain the noodles and divide them among the four bowls. Top each of the bowls with the broth and your desired toppings.

  • Rinse under cold water and drain well.

  • Add noodles and toss to coat.
