  • Two cups cooked chickpeas
  • One small onion, chopped
  • A garlic clove
  • A cup spinach, packed
  • One dried parsley
  • Half tsp cumin
  • One-half tsp ground coriander

  • One-fourth cup and two Tbsp plain flour
  • One and a half tsp baking powder
  • Half tsp baking soda
  • Two Tbsp breadcrumbs

Do This!

  • Place the chickpeas, onion, garlic, spinach, and parsley in a food processor and pulse until pasty and combined.
  • Mix the cumin, coriander, salt, flour, baking powder and soda in a large bowl then add the mashed up chickpea and spinach mixture.
  • Mix well with a wooden spoon, making sure there are no dry patches left
  • Stir in the breadcrumbs and if the mixture seems to dry add up to two more tablespoons of breadcrumbs and mix well.
  • Use the falafel mixture immediately.
  • To make the falafel, heat three inches of oil in a pan.
  • Take a walnut sized lump of the falafel mixture, and using two spoons shape into balls and gently drop into the hot oil.
  • Cook each falafel for about five minutes until browned.
  • Keep going until all the falafel mixture is used up
  • Enjoy inside salad filled pita bread topped with tahini dressing.

Roasted Beets and Carrots with Lemon and Tahini Sauce

  • One pound beets
  • Four tablespoons olive oil
  • Kosher salt

  • One pound Jerusalem artichokes

  • Half teaspoon Aleppo pepper or hot paprika, plus more to taste
  • Two teaspoons fresh lemon juice, divided, plus more to taste
  • Two cups watercress, large stems trimmed

Do this!

  • Preheat oven to 425°.
  • Toss beets with 1 Tbsp. oil on a lightly oiled rimmed baking sheet.
  • Roast 20 minutes, then turn over wedges and continue to roast until beets are tender and darkened around the edges.
  • Toss carrots with one Tbsp. oil on one half of a lightly oiled rimmed baking sheet.
  • Toss Jerusalem artichokes with one Tbsp. oil on the other half of the baking sheet.
  • Arrange carrots and Jerusalem artichokes in a single layer, season with salt and black pepper, and roast until vegetables are lightly browned, about 20 minutes.
  • Toss all the warm roasted vegetables together with lemon zest.
  • Aleppo pepper, and one tsp. lemon juice.
  • Season with salt, Aleppo pepper, and lemon juice.
  • Reserve 1 cup vegetables for Quinoa and Roasted Vegetable Salad.
  • Toss watercress with remaining one tbsp. olive oil and one tsp. lemon juice.
  • Season to taste with salt and black pepper.
  • Serve roasted vegetables with dressed watercress and tahini sauce.

  • Heat a large nonstick skillet over medium heat.
  • Add oil and cauliflower to pan
  • Cook for ten minutes, while stirring occasionally.
  • Place cauliflower on a jelly-roll pan lined with foil.
  • Roast cauliflower at 375° for 18 minutes.
  • Sprinkle with remaining salt and pepper.
  • Add pomegranate arils.
  • Serve with tahini mixture.
