  • One large eggplant, cut lengthwise into quarters

  • One clove garlic finely grated
  • One teaspoon finely grated lemon zest
  • A tablespoon fresh lemon juice
  • Three-fourth teaspoon ground cumin

  • Preheat oven to 475°F.
